Brownies
VEGAN, GLUTEN FREE, PALEO
Yield: 16 brownies
Ingredients:
¼ cup almond butter
¼ cup + 2 tablespoons coconut sugar
⅓ cup maple syrup
¼ cup coconut oil
¾ cup cocoa powder
1 teaspoon vanilla
¼ teaspoon salt
2 flax eggs (2 tablespoons ground flax + 6 tablespoons water, whisk together, set for 15 minutes)
½ cup almond flour
¾ cup vegan chocolate chips
Chocolate Frosting
¼ cup almond butter
2 tablespoons maple syrup
2 tablespoons cocoa powder
2 tablespoons water
Directions:
Preheat oven to 325°F.
Line an 8-inch square baking pan with parchment paper.
Whisk together almond butter, coconut sugar, maple syrup and coconut oil.
Whisk in cocoa powder.
Add vanilla, salt and flax eggs.
Fold in almond flour.
Fold in chocolate chips.
Bake for 28-36 minutes.
Cool completely.
Frosting:
Whisk all of the frosting ingredients.
Frost brownies.
Freeze 20-25 minutes to harden the frosting before cutting.
